In the center is a table of regulars. Most of them get a discount and dine at a fixed price. They know all the waiters by name, and the waiters tell them in secret what is freshest and newest. They are part of the house’s stock, a center around which groups gather. Or better, they are like the tame ducks used in Brittany to lure wild ones.
